Savoury / Charcuterie Displays

Ideal for adult events, grazing tables, and luncheons.


Cheese

  • Cubed cheddar or colby

  • Brie (cut just before serving)

  • Bocconcini or mini mozzarella


Meats

Rule of thumb: 1 soft + 1 firm + 1 crunchy item per letter

Fruit Displays

Fresh, colourful, and perfect for daytime events.


Best fruit choices

  • Strawberries (halved)

  • Grapes (seedless)

  • Kiwi (peeled, thick sliced)

  • Apple cubes (tossed in lemon juice)

  • Blueberries or raspberries


Avoid overly wet fruit unless lined well.

Preparing Your Letters

Highly recommended

  • Baking paper

  • Parchment paper

  • Food-safe wax paper

  • Lining protects the tray and makes cleanup easy.

Fill Technique

Numbered List

  1. Place larger items first

  2. Fill gaps with smaller pieces

  3. Group similar colours together

  4. Slightly overfill for best visual impact

    Do not tightly pack food — loose layering looks better.

Styling You Words & Numbers

Instead of filling every letter the same, vary them slightly.

Example: “BABY”

  • B – White marshmallows + chocolate

  • A – Strawberries + grapes

  • B – Jelly lollies + gummies

  • Y – Yogurt-coated snacks

Quantity Guide

For 24cm letters, approx. 40mm deep:

  • Candy: 250–350g per letter

  • Fruit: 1–1.5 cups per letter

  • Charcuterie: 200–300g total mix per letter

Table Set Up Tips

  • Use a flat surface (marble, timber, or white tablecloth)

  • Leave small gaps between letters for readability

  • Add height behind with florals or stands

  • Keep napkins or tongs nearby

  • Wipe edges before serving

Food Safety Notes

  • Fill letters as close to serving time as possible

  • Keep chilled items refrigerated until needed

  • Avoid direct sunlight on chocolate and cheese

  • Wash and fully dry fruit before filling

  • Charcuterie: 1.5–2.4kg
